We had our friends Grant S and Kylie over for dinner the other night. Grant is a notorious meat eater- so I knew I would have to serve him up something carnivorous. Something that you can gnaw at with your teeth. Enter the roast shoulder of lamb.
I would normally roast a lamb leg or loin. Jamie Oliver convinced me that the shoulder, although overlooked because of its abundance of bone, is a wonderfully sweet section to choose. Because there are so many bones, and loads of connective tissue, it benefits from slow cooking. The tissue melts, and the meat becomes fabulously juicy.

One of my easliest memories of meeting my now husband was this dish his mum made when I can to dinner to meet the family. Despite being a little nervous, I remember being blown away by the taste of this roast. The meat was all soft and full of meaty, tomato flavour. My mother in law put the sauce with pasta as a starter (she needed to fill up 3 growing boys!) and it was divine, yet so simple. It was one of the first recipes her mother in law taught her when she lived in Italy. Have a go. You won't regret it.
